Banana Walnut Crunch Cake
Recipe Submitted by the Berry Springs Lodge B&B

Serves 16

Crunch Topping:
1 cup chopped walnuts
1/2 cup packed brown sugar
1/2 cup softened butter

Cake:
1 white cake mix
1/4 cups chopped walnuts
1/2 tsp cinnamon
3 eggs
1 cup mashed bananas
3/4 cup water
1/4 cup vegtable oil

Preheat over 350 degrees, spray cake pan with cooking spray (i use an angle food cake pan)
For topping combine nuts, butter and brown sugar, place 1/2 mixture in bottom of cake pan, spread out evenly.
To make cake combine cake mix, walnuts and cinnamon. Add eggs, mashed bananas, water and oil. Mix 2 minutes or until well blended. Pour half into pan, top with rest of crunch mixture then top with rest of cake mix.
Bake 50 - 55 minutes or until cake tester inserted near center comes out clean. Cool for 10 minutes, cool completely.
